Nowadays, the Cirò wines from Fattoria San Francesco can be considered modern wines: in order to remember the family tradition of wine-making, Francesco Siciliani adopted as a trade-mark of his factory, the coat of arms of his noble family - a lion climbing a three-top mountain on an azure background -. After working into the family's cantina, accumulating a great store of experience, he finally succeeded in cretaing his own high-technology cantina. The 2.000 sq.m. factory, of which 600 sq.m. underground are the casks store, produces over one million bottles a year; it has got steel silos, and machines which allow an extremely modern wine-making. Fattoria San Francesco decided to concentrate upon the quality control, that follows the , grapes along all the cultivation process till the bottling; thus, it gave a new prestige to the vocation of its land, so long dimmed by wine-makers caring about the quantity and not the quality of the product. The revaluation of vines that made the production of Cirò famous since ancient times, is the main characteristic of the Fattoria philosophy. From the Gaglioppo, typical tree - shaped hill vine, Fattoria San Francesco produces a classic red wine and a rosato (rosé wine), obtained by separating the must from the pulp and the skin of the grapes, immediately after the pigiatura (squeezing out the juice of the grapes). The white Cirò originates only from Greco vines. The Ronco dei Quattroventi and the Donna Madda, are the happy expression of Gaglioppo potentialities, when raised in barriques.
